Chickpea blondies

I know it sounds a bit random – but do try these, they are delicious! A nutrient-packed treat that’s naturally gluten-free, high in protein, and really easy to make.


Ingredients:

  • 1 can (400g) chickpeas, drained and rinsed

  • 120g peanut butter (or almond butter)

  • 80ml maple syrup or honey

  • 1 ½ tsp vanilla extract

  • ½ tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 60g dark chocolate chips (plus extra for topping)


Optional add-ins:

  • ½ tsp cinnamon for warmth

  • 1 tbsp ground flaxseed for extra fibre

  • 1 tbsp coconut flour for a firmer texture


Instructions:

1. Preheat oven to 180°C (fan 160°C) and line a small baking tin with parchment paper.


 2. In a food processor, blend chickpeas, nut butter, maple syrup, vanilla, baking powder, baking soda, and salt until completely smooth. Scrape down the sides as needed.


 3. Fold in the chocolate chips by hand.


 4. Pour the batter into the lined tin, spreading it evenly. Sprinkle extra chocolate chips on top. Bake for 20–25 minutes until the edges are lightly golden and the centre is set.


5. Let them cool completely before slicing (they firm up as they cool!).


Soft, chewy, and packed with goodness – perfect for a healthier sweet treat. Enjoy!
